What are Flat Bed Drippers?
Flat bed drippers, like the Kalita Wave, Origami, April, and Orea brewers, have a distinctive flat bottom with a single or several small holes for water drainage. This design differs from conical drippers (like the classic V60) that have a single, larger hole. The flat bed shape creates a different environment for coffee extraction.
The Flat Bed Advantage: Taste and Technique
- Balanced Flavor: Flat bed drippers are known for producing cups with a balanced sweetness, acidity, and body. The shape promotes even water flow through the grounds, leading to consistent extraction.
- Brewing Forgiveness: These drippers are a bit more forgiving compared to conical brewers. The water flow is slightly restricted which helps prevent channeling (uneven extraction) even if your pouring isn't super precise.

Choosing Your Beans (Recommended)
- Roast: Aim for light to medium roasts. These preserve the unique characteristics of the coffee's origin.
- Origin: Explore the world! Try fruity Ethiopian coffees, bright and juicy Kenyans, out of this world Geishas or balanced Colombian/Central American picks.

- Dose: 15g coffee Yield: 240g water Brew Ratio: 1:16
- Grind: Medium (like Coarse table salt) Water Temp: 94°C/201°F (just off the boil)
- Filter: Flat bed paper filter (We recommend Sibarist or Kalita brand), rinsed well
What you'll need:
- Flat bed dripper
- Flat bed filters
- 15g freshly ground coffee (medium-fine grind, like table salt)
- 240g hot water (just off the boil, around 205°F / 96°C)
- Timer
- Scale
- Kettle (ideally with a gooseneck spout)
Step-By-Step Guide

Prep: Rinse your paper filter in the dripper with hot water. This gets rid of any papery taste and pre-warms the brewer. Discard the rinse water.

Add Coffee: Place your dripper on a scale. Add the ground coffee and gently shake to create a level bed. Tare (zero out) your scale.

Bloom: Start your timer. Slowly pour about 30g of water in a circular motion over the coffee grounds. This allows the coffee to release gases (bloom) for about 30 seconds.

Main Pour: Continue pouring in slow, steady circles, aiming to saturate all the grounds evenly. Try to complete your pour by about 2:30 on your timer.

Wait and Enjoy: Let the water fully drain through. Total brew time should be around 3-3:30 minutes. Remove the dripper, pour your delicious coffee, and savor the results!

- Grind Matters: Adjust your grind slightly if your brew time is too fast (coarser grind) or slow (finer grind).
- Experiment: Play around with different coffees, roast levels, and even water temperatures to find the perfect combination for your palate.
- Filter Matters: While flat bed brewers can work with various filter shapes, they are designed for specific flat-bottomed paper filters. These filters match the brewer's shape, often featuring ridges or waves to promote airflow and prevent them from clinging to the dripper walls. This ensures even water distribution for optimal extraction. Different paper filters will yield different taste profiles.
